How can I change the whole Sentora to another server without losing anything ?

You will need to copy all the DB/files/Data.
First setup configure the news setup ( install sentora ) then you will need to move in all related files including sentora db's. ( Dump all db's and restore them with the correct permissions ).
/var/sentora
/etc/sentora
You need to ensure also to copy cron's.
And change the panel mysql passwords to the new one or those you will deploy.
It's a complicated task and require some admin / good understanding of sysadmin / sentora.
This had been also asked and answered more than once here ( search the forum ).
